Insanely Piggy Pig Roast Menu, brought to you by Goods

When you're working with the freshest Hampshire breed pigs from Brooklyn's meat haven, The Meat Hook, it's hard to go wrong. But Chef Alex McCrery of Goods is making these Western Pennsylvanian hogs even more delectable for our 3rd Annual Pig Roast this coming Sunday.

Here's how the magic will happen. We'll actually be roasting two smaller hogs (younger pigs = juicier meat), stuffed with pork butt for deeper porky flavor. Friday, we brine them...Saturday morning, we spice rub them...and at 5p the day before the event, we start spit-roasting in a custom-made pit in our courtyard. 

That 21-hour spit-roasting process is the real deal...low & slow...and will make every bite so mouth-wateringly tender, you won't know how to do with yourself.
